Chicken Fried Rice

2 teaspoons sesame oil
½ cup chopped onion
2 cloves crushed garlic
1 lb skinless chicken breasts diced in ½ inch pieces
1 cup uncooked brown rice
1 tablespoon reduced sodium soy sauce
1 cup diced carrots
2 ¼ cups reduced sodium chicken broth
½ teaspoon salt
¼ teaspoon ground black pepper
¼ cup frozen green peas, defrosted
¼ cup green onions, chopped


  • In a medium pan, heat oil over a medium heat

  • Add onion and garlic then sauté until soft, about 2 minutes

  • Add chicken and cook for 5 minutes, browning each side and stirring often

  • Add rice and cook for 1 minute, then stir in soy sauce and coat the rice

  • Add carrots, chicken broth and seasonings, bring to the boil.

  • Reduce heat, cover and simmer for 30 minutes until liquid has been absorbed.

  • Stir in peas and green onions, and heat through.
