- Ingredients
6 Low fat cheese triangles
1 cup diced pineapple
1 cup diced apple
1 cup seedless grapes, red or white
Method
- Cut cheese triangle in half to give 12 pieces
- Skewer alternate fruit pieces with cheese on 4 skewers of 8-10 inches in length
These kebabs have a Points value of 3 per serving and make 4 servings.
Chicken Pieces sautйed with ginger and plums
2 servings of cooking spray
4 2.5 oz chicken thighs, de-boned and skinless
ј teaspoon table salt
ј teaspoon black pepper
6 small plums, sliced, not peeled
1 tablespoon freshly grated root ginger
1 medium garlic glove, minced
ј cup canned chicken broth
ј cup frozen apple juice concentrate, thawed
- Coat a large non-stick frying pan with the cooking spray and heat to a medium high temperature. Season the chicken with salt and pepper and place in the pan and cook for 4 minutes each side, until brown and then remove from the pan.
- Recoat the pan with cooking spray and re-heat the pan. Add plums, ginger and garlic to the pan, sautй for two minutes and then add chicken broth to de-glaze the pan. Add the apple juice concentrate and stir.
- Return the chicken to the pan, cover and simmer until the chicken is cooked through, which should take about 5 minutes.
1 serving is one chicken thigh and Ѕ cup of sauce. One serving has a points value of 3 and takes about 35 minutes to prepare.
